INGREDIENTS
- 10 spring roll wrappers
- 1 red pepper, julienned
- 1 large carrot, julienned
- 1 yellow bell pepper, julienned
- 1/2 cucumber, julienned
- 2 green onions, thinly sliced
- 1 cup red cabbage, finely chopped
- Peanut Sauce
- 1/4 cup drippy peanut butter or 1/2 cup peanut butter powder
- 1/4 cup sesame oil
- Juice from 1 lime
- 1-2 tablespoons vinegar
- 1 teaspoon garlic powder
- Optional: 3/4 teaspoon red pepper flakes
INSTRUCTIONS
- Dip a spring roll wrapper in warm water on a plate for about 10 seconds and lay on a dry plate or cutting board.
- Arrange veggies in the center of paper. Fold the bottom of rice paper over the fillings and fold in the sides and roll until it is all rolled up.
- Continue until all ingredients are used up. Cut spring rolls in half and place cut side up.
- Whisk together all ingredients for peanut sauce.
