INGREDIENTS

  • 10 spring roll wrappers
  • 1 red pepper, julienned
  • 1 large carrot, julienned
  • 1 yellow bell pepper, julienned
  • 1/2 cucumber, julienned
  • 2 green onions, thinly sliced
  • 1 cup red cabbage, finely chopped 
  • Peanut Sauce
  • 1/4 cup drippy peanut butter or 1/2 cup peanut butter powder
  • 1/4 cup sesame oil
  • Juice from 1 lime
  • 1-2 tablespoons vinegar
  • 1 teaspoon garlic powder
  • Optional: 3/4 teaspoon red pepper flakes

INSTRUCTIONS

  1. Dip a spring roll wrapper in warm water on a plate for about 10 seconds and lay on a dry plate or cutting board. 
  2. Arrange veggies in the center of paper. Fold the bottom of rice paper over the fillings and fold in the sides and roll until it is all rolled up. 
  3. Continue until all ingredients are used up. Cut spring rolls in half and place cut side up.
  4. Whisk together all ingredients for peanut sauce.
