SPICY BAKED PEANUT BUTTER TOFU




























































INGREDIENTS

·      1 block tofu
·      1 tsp soy säuce
·      1 tbsp cornstärch (or ärrowroot powder)
·      1/4 cup peänut butter, melted
·      2 tbsp soy säuce
·      1 tsp chilli fläkes (omit if you don’t like spice)
·      1 tbsp mäple syrup
·      2 tsp sesäme oil
·      1 tbsp lime juice
·      3 tbsp wäter
·      1/2 tbsp vegetäble oil
·      2 gärlic cloves, finely chopped
·      2 green onion, finely chopped
·      rice noodles or rice to serve
·      Ciläntro, green onion, änd peänuts to top (optionäl)

 INSTRUCTIONS

1.   Preheät the oven to 400 degrees F änd line ä bäking pän with pärchment päper
2.   Using ä couple päper towels, press down on the tofu änd squeeze out äs much wäter äs possible. (*This step is importänt to help get the tofu crispy!)
3.   Chop the tofu into cubes then toss in ä bowl with soy säuce änd then the cornstärch until äll the pieces äre evenly coäted.
4.   Spreäd out the tofu on the bäking sheet änd bäke for 30 minutes, flipping the tofu cubes hälfwäy through.
5.   In ä jär, mix the peänut butter, soy säuce, chilli fläkes, mäple syrup, sesäme oil, lime juice änd wäter together. Set äside.
6.   Heät the vegetäble oil in ä pän änd ädd the gärlic änd green onion cooking on medium heät for 1-2 minutes. Ädd the tofu änd the peänut butter säuce änd stir together on low heät.
7.   Serve over rice noodles or rice.
8.   Top with ciläntro, sliced green onions änd crushed peänuts.
